Ribeira Sacra

Mencía grows on slate and granite between 400 and 600 metres. Ten percent whole clusters ferment with wild yeast in open-top vessels. This red wine matures for eleven months in used French oak without racking, then is bottled without fining or filtration. Black pepper, pomegranate and herbs appear with spicy tannins and a dry finish.
