Hemel-en-Aarde Ridge

Subtle red-cherry and raspberry notes sit with clove and baking spice. Fruit comes from unirrigated vines at La Vierge in the Hemel-en-Aarde Ridge. The wine spends nine and a half months in 228-litre French-oak barrels, divided among first-, second-, third- and fourth-fill wood. The finished analysis lists 12.99 percent alcohol, 5.2 grams per litre of acid, a pH of 3.51 and 1.9 grams per litre of residual sugar.
