Fine, steady bubbles lead into a creamy yet crisp palate, where grapefruit brightness and balanced acidity keep the richer flavours in check. The finish is clean and persistent. A useful half bottle for two glasses, especially with oysters, gougeres or mild washed-rind cheese.
