A true perry made without apples, this cider uses several varieties of wild-fermented pears from Salt Spring Island and elsewhere in British Columbia. Perry pears and heritage eating varieties are both part of the blend. The producer records a fruity nose, champagne-like effervescence and a delicate pear finish, with the bottle listed at 7.4 per cent alcohol and the Profitek format fixed at 750 mL.
