About Domaine Romain & Simon Pillot
Six generations of the Pillot family have worked vines in Mellecey, in the Côte Chalonnaise, over roughly 150 years. When Raymond succeeded his father Henri, the four-hectare farm still had fruit trees among the vines; estate bottling began in the 1960s. Romain and Simon formally took charge together in 2024, by which time the domaine had grown to seventeen hectares.
Their vineyards centre on Mercurey and the surrounding Bourgogne appellations, with Pinot Noir and Chardonnay. For the reds, grapes are destemmed and fermented in temperature-controlled concrete or stainless steel, with selected lots spending a year in barrel before the final blend is decided by tasting.
