Caramel, toffee and vanilla open a rich, rounded nose, followed by a brûléed sweetness that remains balanced rather than heavy. Fermented from molasses made with caramelized British Columbia honey, the spirit is distilled on custom stills and matured for at least fifteen months in full-sized bourbon casks. The palate carries honeycomb, oak and soft baking spice through a smooth centre. A smoky honeycomb note gives the finish length and definition. Sip neat, pour over ice or use in spirit-forward cocktails.
