Lightly tart and vividly citrus-led, this farmhouse wheat ale is brewed and conditioned on lime peel and juice. A house mixed culture of saison yeast, Brettanomyces and bacteria brings fermentation complexity without obscuring the fresh lime character. The palate stays bright, refreshing and easy-moving, with a gentle rustic edge through the finish. Serve well chilled with ceviche, fish tacos, goat cheese or grilled vegetables.
