Eric Bordelet Sidre Brut Tendre

Fine, persistent bubbles carry ripe apple, quince, pear, white flowers and gentle baking spice. The palate is generous yet refreshing, bringing crisp acidity together with orchard fruit and a delicate measure of natural sweetness. It is made from around twenty traditional cider-apple varieties grown on ancient schist soils in southern Normandy. The finish is clean and harmonious, with fruit, freshness and gentle sweetness held in balance.

About Eric Bordelet
Eric Bordelet returned to his native Mayenne in 1992 after restaurant work that included serving as a sommelier at L'Arpège in Paris. His friendship with Didier Dagueneau encouraged him to approach apples and pears with a winegrower's attention to fruit, soil and vintage. Today Eric and Céline share the running of the family business, with Julien working in the cellar.
Around thirty apple varieties and twenty pear varieties are harvested by hand, sorted for ripeness and processed separately before blending. His ciders and perries develop their gentle sparkle through natural fermentation.
