A mixed-culture farmhouse ale with a vinous edge, this saison is matured for nearly two years in French oak foeders before resting on Pinot Blanc pomace. The palate sits between beer and white wine, bringing layered fermentation character, orchard-fruit lift and a gently structured finish. It is expressive without feeling heavy. Serve lightly chilled with roast chicken, washed-rind cheese, grilled vegetables, pâté or mushroom dishes.
