Rich malt and caramel form the centre of this layered barleywine, joined by dark fruit and a lightly sherried oxidative note from its mature component. Bourbon and rye-whiskey barrels add vanilla, oak and measured spice, while a younger portion contributes freshness and firm bitterness. The blend feels deep without becoming static, finishing warm and persistent. Serve cool in a small glass with aged cheddar, blue cheese, roast beef, pecan tart or dark chocolate.
