Rustic grain and farmhouse yeast sit at the centre of this low-strength saison, framed by clear but measured French-oak character. Fermentation and maturation in a foeder, followed by four months of bottle conditioning, give the beer a layered, gently structured feel while preserving its refreshing table-beer scale. Grain, yeast and oak remain neatly interwoven through the finish. Serve cool with roast chicken, pate, firm cheese or grilled vegetables.
