Warm honey and rosemary lead an aromatic, savoury opening, joined by citrus peel and earthy herbs. The palate is rounded and gently sweet, with balsam needles bringing a crisp, pine-like freshness through the middle. A restrained coffee note adds depth without turning bitter. The finish is smooth, herbal and quietly lingering. Serve lightly chilled with aged cheese, roast squash, glazed pork or a not-too-sweet nut tart.
