Simcoe hops take the lead, giving the beer a fresh, vivid and concentrated hop presence. The profile is direct rather than crowded, with the single named variety providing the aromatic centre and a measured bitter frame. It is an expressive IPA with enough definition to stand beside assertive food. Serve well chilled with burgers, spicy fried chicken, pork tacos, sharp cheddar or grilled halloumi.
