Light sweetness and lively effervescence keep the unusual aromatics composed, finishing clean, dry-leaning and gently spicy. Serve well chilled with grilled corn, fish tacos, herbed goat cheese or a punchy grain salad; the fresh acidity and green notes work especially well with citrus, herbs and mild heat.
