About Oenops Wines
Based in Prosotsani near Drama, Oenops Wines is Nikos Karatzas's independent Greek project, created after more than a decade leading Ktima Pavlidis. Karatzas studied chemical engineering in Thessaloniki and winemaking in Bordeaux. Rather than owning estate vineyards, the winery works with growers across Greece, sourcing native varieties from selected plots, including old-vine parcels.
Each parcel is made into wine separately, using clay amphorae, concrete, neutral oak or stainless steel. Cellar choices vary by wine, with spontaneous fermentation, ageing on the lees and bottling without filtration among the methods used.
