British Columbia-grown salal berries are steeped in Wallflower Gin, creating a West Coast answer to classic sloe gin. The fruit brings an earthy, tart, tannic and herbaceous character, deeper and more savoury than its blueberry-and-blackcurrant appearance suggests. Deep crimson in colour, the liqueur combines coastal berry intensity with the character of its gin base, giving the palate complexity and a distinctly local profile.
