Made in the Basque Country from a blend led by sharp apple varieties, including Errezil, this traditional cider undergoes natural-yeast fermentation in stainless steel. The documented notes include apple skin, orchard floor, pear and mandarin zest. About Isastegi
Cider has been made at the Isastegi farmhouse in Tolosa since the seventeenth century, originally for the household. In 1984, Migel Mari Lasa and his father Joxe Mari turned that inherited practice into a commercial cider business. A third generation of the Lasa family now runs the cider house.
Its ciders are based on local apples from the family farm and nearby growers in Tolosaldea, with suppliers concentrated within roughly fifteen kilometres.
