A fresh, lightly aromatic opening gives way to a brief hint of sweetness before the palate turns decisively dry. Clean rice flavour and a bright, ginjo-like lift keep the middle focused, while the extra-dry structure builds toward the finish. The final impression is crisp and energetic, with savoury clarity, faint sweetness and firm dryness arriving in a well-defined sequence.

About Yamamoto Brewery
Yamamoto Brewery was established in 1901 in Hachimori, on Akita’s Sea of Japan coast. Its long-standing Shirataki label takes its name from the waterfall behind the brewery.
Spring water from the Shirakami Mountains arrives through a private pipe installed in 1932. The brewery mills its own rice, polishing it to about half its original weight on average. Staff choose music to play in the brewery, and the range extends to craft gin made with sake-lees aromatics.
