Oak and cognac-like depth give the palate a broad, warming shape, while the full, velvety texture keeps the roasted notes polished rather than severe. The finish is layered and persistent. Serve lightly chilled with chocolate cake, braised beef, blue cheese, coffee-rubbed pork or a dark-fruit tart.
