A further year on sour cherries brings vivid red fruit and measured tartness, while the oak lends savoury complexity and a smooth, composed texture. The finish is long, bright and gently woody rather than sweet. Serve cool with roast duck, charcuterie, washed-rind cheese, mushroom dishes or dark chocolate.
