Citrus zest, pineapple and white pepper lead the aroma, followed by pear, lemon and a subtle earthy note on the palate. Fresh Fraser Valley quince is refermented with a house culture of Brettanomyces and Lactobacillus, bringing bright acidity and layered fruit rather than simple sweetness. A medium body keeps the wild character composed through the finish. Serve well chilled with roast pork, charcuterie or washed-rind cheese.
