Forest fruits, liquorice, undergrowth, spice and chocolate shape the profile. The palate is full and balanced while remaining fine and fresh; fruit and barrel notes return in the aftertaste. Tempranillo comes from organic vineyards more than seventy years old in Rioja’s Sonsierra. Fermentation was spontaneous with native yeasts, followed by two weeks of maceration and fourteen months in French, Eastern European and American oak.
