Juniper and coriander form a clear gin backbone, layered with locally grown hops, lavender, rosemary and lemon verbena. The palate is fresh and herbaceous, balancing piney structure with bright citrus and a restrained floral note. Butterfly pea flower gives the spirit its vivid blue colour and a dramatic shift when tonic or citrus is added. Serve in a Gin and Tonic with lemon, or build a bright, aromatic Collins-style drink.
