Fermenting the cherries dry preserves their robust aroma while bringing crisp acidity and definition to the fruit. Coarse filtration leaves a little extra texture, giving the palate a natural, generous feel without sacrificing freshness. Serve chilled with duck, pork, charcuterie or dark chocolate.
