Ripe plum and red berry lead the aroma, with a subtle wild-fermentation funk adding savoury complexity. Fresh Lillooet Valley plums bring flavours of cherry, plum and lemon, framed by moderate acidity rather than sharp sourness. Conditioning in can gives the palate a brighter character and a smoother, more composed texture. Serve well chilled with roast pork, washed-rind cheese, duck rillettes or a plum-led tart.
