Ripe apricot brings generous stone-fruit flavour to a lively wild ale fermented with Brettanomyces. The fruit is vivid and fresh, while the wild yeast contributes a gently funky, savoury edge that builds complexity without obscuring the apricot. A bright sourness keeps the palate refreshing and carries the fruit through the finish. Serve cool with roast pork, grilled sausages, aged cheddar, soft goat cheese or apricot-glazed chicken.
