Pedro Ximénez barrel ageing adds raisin, sultana and dark sherry richness to a dense caramel-fudge stout. Chocolate and coffee tones sit beneath the dried fruit, while roasted malt brings enough bitterness to shape the sweeter pastry-stout profile. The palate is full and layered, finishing with lingering cocoa and dark fruit. Serve cool with blue cheese, chocolate tart, fruitcake, braised beef or roasted nuts.
