AboutYoshida Sake Brewing
The Yoshida family’s brewing story in Hirose reaches to 1730, with the sake brewery formally established under the Hirose domain in 1743. Its Gassan name looks to Mount Gassan and the castle site above the town, recalling a local practice of reserving the year’s finest barrel for the domain lord. Today, the brewery uses temperature-controlled facilities and makes trial brews each year.
Brewing water comes from a restored well in Hirose and is very soft. Contracted growers in nearby Nishihida supply rice, which the brewery buys as brown rice and mills on site. After early pasteurization, sake is stored in bottles rather than bulk tanks to limit oxygen exposure.

Japanese Sake
White grapefruit, cucumber and a light savoury note lead into a rounded palate of melon, ginger and mint. The texture is mellow and quietly full, with rice-driven umami providing depth before an elegant, dry finish restores precision. Its balance makes it versatile at the table; serve chilled or gently warmed with grilled seafood, mushroom dishes, carbonara or savoury noodles.
