Three childhood friends started West Cork Distillers in Union Hall in 2003 with two small stills. The founder-owned business later moved production to Skibbereen, where it handles the process from grain through maturation and bottling. The range includes triple-distilled whiskey made from Irish grain and matured or finished in bourbon, sherry, rum and virgin-oak casks.

Cinnamon bark and oak open the aroma, joined by ripe nectarine, salted peanut and faint herbal notes. Golden Delicious apple and honey shape the palate, with peppery spice developing alongside the fruit. Apple, honey and oak carry through the middle, supported by the same salty nuttiness. The finish gathers cinnamon, pepper, ripe nectarine and herbs into a clear fruit-and-spice profile.
