Waterloo Brewing started with a batch of Waterloo Dark in 1984, at the beginning of Ontario’s modern craft-brewing movement. The boar’s head that appeared on those first bottles remains its emblem. Now based in Kitchener, the brewery makes its namesake beers alongside small-batch releases.
