Bernard and Rosemary Walsh founded Walsh Whiskey in 1999, inspired by the variety of Irish whiskey made in the nineteenth century. Their two ranges, Writers’ Tears and The Irishman, explore Irish malt and pot-still styles. The team develops recipes and oversees maturation, choosing spirit and casks from selected partners.

Light fruit and a thread of liquorice lead into crumbly vanilla fudge. The palate is creamy and composed, with peaches, biscuit and almond carried by a supple malt texture. Bourbon and sherry cask maturation adds sweetness and restrained oak rather than weight. The finish is long and clean, leaving vanilla, orchard fruit, toasted almond and a dry oak echo.
