Tomita Brewery

Tomita Brewery in Kinomoto, Shiga, traces its family brewing roots to the sixteenth century. The calligraphy on Tomita Brewery’s Shichihonyari labels is the work of artist Kitaoji Rosanjin.

Many of its sake are made with a single locally grown rice variety and water from the brewery’s own well. Since 2004, the brewery has explored using less-polished rice, leaving more of each grain intact. Wooden vats are also part of its brewing.
