Ron and Shelley Mayert’s TIME Family of Wines includes Evolve, the Okanagan label Harry McWatters launched in 2015. Evolve opened a dedicated sparkling-wine home at the start of the Naramata Bench in 2025, while continuing to make still wines.
Head winemaker Lynzee Schatz brings Okanagan roots and experience in California, Ontario and Australia, including years in the Yarra Valley that deepened her interest in sparkling wine. The winemaking team draws on estate vineyards in Osoyoos, Naramata and Summerland, as well as selected partner vineyards.

Wild strawberry, watermelon and redcurrant lead, with a pale salmon hue and a savoury herbal accent. The palate is crisp, mostly dry and brightly fruited, balancing ripe red berries with citrus zest and a light mineral line. Clean and refreshing through the finish, it suits grilled prawns, seafood salads or roast salmon.
