The Colebank family opened Stillhead in Duncan, British Columbia, in October 2017. Master distiller Brennan Colebank had spent fifteen years in technology before turning his interests in chemistry and spirits into a new career. Wild berries, locally farmed rhubarb and Cowichan Valley wine barrels link the range to Vancouver Island.
Each whisky barrel is followed as it matures, with batches released when the distillers judge them ready. The cask programme includes bourbon, local wine, Port, Madeira, sherry and peated Islay casks.

Juniper and bright citrus meet a distinct but controlled layer of Islay smoke. The gin first rests in ex-bourbon barrels, building vanilla and rounded oak, before a shorter finish in heavily peated Scotch casks adds maritime peat and depth. Bottling at navy strength preserves the intensity of the cask influence while the underlying London Dry character keeps the palate balanced. Rich, smoky and unusually structured, it can be served neat, with a little water, or in a concise spirit-forward cocktail.

Sweet grain and lively rye spice open the palate before a measured layer of Islay smoke moves in. Peat is present but controlled, bringing char, earth and a light saline note rather than dominating the whisky’s Canadian rye character. The middle remains smooth and gently rounded, balancing sweetness with peppery warmth and smoky depth. A clean, warming finish carries rye spice, soft peat and a final hint of brine. Enjoy neat or with a small splash of water.
