Moira and James Doherty founded Sliabh Liag Distillers to bring legal commercial distilling back to County Donegal after an absence of more than 175 years. The company’s distilling operations are based at Ardara Distillery. While that distillery was being built, the Silkie whiskey range began with sourced malt and grain whiskeys, blended and hand-bottled in Donegal. Sliabh Liag also makes An Dúlamán gin.

The palate is smooth and approachable, bringing gentle grain sweetness together with a restrained thread of smoke. Citrus keeps the texture lively while the malt adds roundness and depth. Fresh apple meets pipe tobacco and dry peat smoke, followed by salted caramel, dark chocolate, liquorice and oak. A gentle sweetness keeps the smoke rounded, while warming spice gives the finish definition. Richer and darker than the original Silkie blend without becoming heavy, it is best served neat or with a small splash of water.
