Shiraiwa Kura is the purpose-built brewery behind IWA 5 in Tateyama, Toyama. Richard Geoffroy founded the sake project after twenty-eight years at Dom Pérignon. His relationship with Japan began in 1991 and deepened through repeated visits. Architect Kengo Kuma designed the brewery to bring production, hospitality and community under one roof. IWA 5 is a blend of separately brewed sakes.

Bright floral and vegetal aromas open with remarkable definition, slowly deepening toward white pepper and darker, quieter tones. The palate is poised and almost weightless, yet carries real intensity and energy. Sweet, bitter, sour, spicy and savoury elements move in balance rather than isolation. The finish is tactile, racy and mouthwatering, lingering with refined smoothness and a clean, composed sense of depth.
