Shichida

Ripe grape and white flowers open into white peach, yellow apple and a hint of fig. The palate is broad and softly textured, with rich rice sweetness balanced by clear acidity and a measured savoury umami note. A gentle nutty suggestion adds complexity before the finish turns slightly dry and composed. Serve lightly chilled with roast pork, creamy mushroom dishes, grilled eel, richer fish, Chinese-style dishes or mild blue cheese.
