AboutShata Shuzo

Shata Shuzo, the brewery behind Tengumai, was founded in 1823 in Hakusan, Ishikawa. It uses water from Mount Haku and rice from the surrounding Kaga plain. In the 1960s, seventh-generation Toshiro Shata and master brewer Saburo Naka revived the traditional Yamahai yeast-starter method at the brewery.

The team prepares koji and yeast starters by hand, and many of its sake are given time to mature.

The finish remains smooth, with gentle acidity and light body carrying the restrained character through the final impression.
