Seven Seals

Dried fruit, gingerbread and roasted nuts lead a layered, aromatic opening, with acacia honey adding a softer sweetness underneath. Port-seasoned wood gives the palate richness and a velvety texture, while a restrained thread of peat smoke keeps the fruit from feeling heavy. The middle is harmonious and gently spiced, bringing raisins, nuts and malt into balance. A long finish carries honeyed sweetness and subtle smoke. Sip neat or add a few drops of water to draw out the dried fruit and soften the peat.

The palate is soft and rounded, with sherry-seasoned wood building a concentrated toffee-and-nut centre rather than simple sweetness. Orange brings brightness through the middle, keeping the richer notes in balance. The finish is long and steady, carrying caramelized nuts, candy and citrus.
