This still rosé is light and fruity, made entirely from Dolcetto. The vineyard is cropped below fifty quintals per hectare. Fermentation takes place in stainless steel with the skins of unfermented white grapes. Maturation lasts at least twelve months in stainless steel or large used barrels. The cuvée name is a nineteenth-century Carpeneto dialect term for a childhood nickname of the grape. The wine is produced organically, and alcohol is thirteen and a half percent.

Medium-bodied and perfumed, the wine has a soft, harmonious palate with fresh acidity and a clean finish. It is made entirely from Albarossa and matured for twenty-six months in ceramic amphora. The wine comes from Piedmont’s Alto Monferrato, and the cuvée name means ‘toy’ in the local dialect. Alcohol is thirteen and a half percent, and production totals nine hundred bottles.

Dry and medium-to-full bodied, the palate brings firm tannins and energetic acidity to the ripe fruit, keeping the wine structured rather than heavy. Extended maceration and time in older barrels lend depth without obvious sweetness. Pair with braised beef, game, rich pasta or aged hard cheese.
