Fresh sugarcane, mint and apricot lead the nose, with green banana and a faintly briny edge adding complexity. The palate is silky but vivid, balancing pure cane sweetness with grassy flavours, lemongrass, almond and savoury spice. Fresh-pressed cane juice is wild fermented in Oaxaca's Sierra Mazateca, preserving an earthy, highly expressive character rather than a polished neutral profile. The finish is long, green and gently saline. Serve neat, over ice or in a sharply balanced Daiquiri.
