New York Distilling Company makes gin and rye whiskey in Bushwick, Brooklyn. Co-founders Allen Katz and Tom Potter set out to bring those spirits back to New York, drawing on the city’s distilling history. Its rye programme includes Horton, an heirloom variety revived from a small seed-bank allotment and grown with partner farmers in Seneca Falls. An adjacent bar serves the distillery’s spirits.

Juniper anchors a bright, contemporary profile, layered with elderberry, citrus, cinnamon and hibiscus. Rose and lavender add a fragrant lift without taking over, while lime and coriander keep the palate fresh and dry. The texture is smooth and lightly rounded, balancing berry sweetness and floral detail against a firm botanical backbone. The finish is clean, citrus-led and gently spiced. Serve with tonic and lemon, in a Bee's Knees or in a softer Martini where the floral notes can remain clear.
