Nagayama Honke Shuzōjō

Nagayama Honke Shuzōjō, the brewery behind Taka, was founded in 1888 in Futamatase, Ube, in Yamaguchi Prefecture. Fifth-generation Takahiro Nagayama joined the family brewery in 2001, studied at Japan’s National Research Institute of Brewing and made junmai sake its focus.

The brewery grows some of its own sake rice and also works directly with local farmers. Its brewing water comes from a deep aquifer fed through Yamaguchi’s limestone landscape.
