Sébastien Thomas and Fabien Marchand-Cassagne founded Moderato in France in 2020. Thomas comes from a family of winegrowers and distillers in Cognac, while Marchand-Cassagne brought experience developing consumer brands. Working with partner growers and winemakers, they begin with French wine and remove alcohol, aiming to retain its aromas and structure.

Garnet colour carries purple highlights in this red wine. Black fruit, spice and a touch of vanilla accompany a supple, fruit-driven palate with velvety tannins, good structure and a fresh, soft finish. Merlot provides classic smoothness while Tannat supplies fine structure. After vinification, the wine is dealcoholized by low-temperature vacuum distillation to preserve its aromas, structure and balance.
