Canadian Red
Bing cherry, black raspberry, beetroot, pepper and toasted oak form the profile. The fruit is gently destemmed by gravity into open-top fermenters with twenty-five percent whole clusters. A cold soak precedes a two-week indigenous-yeast fermentation with gentle hand plunging. After fermentation and a post-maceration period, the wine moves to French oak, twenty percent new, for eleven months. It is unfined and coarsely filtered, with ripe fruit and a lasting finish.
