Brigitte Haas and François Legras established Legras & Haas in Chouilly in 1991. Their sons Rémi, Olivier and Jérôme now run the house, each taking responsibility for a different side of the business. In the Grand Cru village of Chouilly, the house has 18 hectares of Chardonnay across 35 parcels.
Vineyards in Les Riceys and long-standing relationships in Leuvrigny and Aÿ widen the palette beyond the Côte des Blancs. The range includes blanc de blancs and blends of Chardonnay, Pinot Noir and Meunier.

Pale gold with a fine mousse, this opens with lime zest, lemon, tangelo and golden peach. Cream, fresh bread and a gentle buttery note add breadth, while ginger and restrained oak bring subtle spice. The palate is energetic and finely balanced, moving from ripe orchard fruit toward a firmer mineral core. Salinity builds through the long finish, leaving citrus, chalk and a quiet savoury echo.

Brilliant straw in colour, opening with fine yeast, lemon confit, quince and green apple peel. The palate combines clear fruit with balanced acidity and a fine, creamy mousse. Salty mineral accents sharpen the middle without making it severe, while the orchard and citrus notes remain fresh and precise. Textured yet controlled, it finishes long with gentle creaminess and mineral lift.
