Kokuryu Sake Brewing Corporation was founded in 1804 by Nizaemon Ishidaya in Matsuoka, now part of Eiheiji in Fukui Prefecture. The brewery draws on the area’s water and Fukui’s food culture, making sake under the Kokuryu and Kuzuryu names. Its aim is delicate umami and an elegant balance of flavour that complements food without overpowering it.

Sweet fruit aromatics lead into a smooth, refreshing palate with a notably silky texture. The fruit remains clear and gently rounded, while a clean savoury line keeps the profile composed rather than overtly sweet. Its body is light enough to stay nimble, yet there is enough richness to give the middle palate shape. The finish is polished, fresh and quietly persistent.
