AboutKawatsuru Shuzo
Founded by Seizo Kawahito in Kan-onji in 1891, Kawatsuru Shuzo remains under family direction, with sixth-generation Yuichiro Kawahito serving as president. Its name, which joins river and crane, came from the founder’s dream of a crane alighting beside the nearby Saita River. Underground water from that river still supplies the brewery.
Most rice comes from Kagawa, from the brewery’s own plots and contract growers, and staff take part in cultivation. Since 2004, the brewery has gradually moved production away from large tanks toward hands-on, small-lot brewing.
Kawatsuru Zenigata Cup Sake 180 mL
Japanese Sake
Clean rice and a light cereal note lead a restrained, savoury aroma, with a touch of pear adding freshness. The palate is crisp and dry, carrying gentle umami through a smooth, uncomplicated texture. Measured acidity keeps the finish tidy and refreshing, making it especially well suited to salty or fried dishes. Serve chilled or gently warmed with tempura, yakitori or grilled fish.
Kawatsuru Oseto Kimoto Junmai Sake 300 mL
Japanese Sake
Crisp and dry, with refined aromas of pear, melon and banana over a savoury rice core. Traditional kimoto brewing brings gentle depth, measured acidity and an umami-led shape without obscuring the clean finish. The balance makes it versatile at the table; serve chilled or lightly warmed with grilled fish, yakitori, tempura, mushrooms or soy-braised dishes.
