AboutDomaine Jean Collet & Fils
The Collet family has tended vines in Chablis since 1792, and Jean Collet established the domaine that bears his name in 1952. Gilles joined his father in 1979. The domaine’s roughly 40 hectares extend along both banks of the Serein, from Petit Chablis through to grand cru vineyards.
The old vines at Villy descend from vines selected for propagation in 1932. The family is bringing more of the vineyard into organic farming, with soil cultivation reducing reliance on herbicides. Fermentations begin spontaneously, and ageing in stainless steel, large wooden casks or barrels is chosen for each wine’s site and vintage.
Domaine Collet & Fils 2022 Chablis Premier Cru Vaillons 3 L
Elegant and finely structured, the palate carries notable density through a measured, linear frame. Its texture is composed and quietly expansive, balancing freshness with a subtle, rounded breadth from its mixed-vessel élevage. The wine builds gradually across the middle without losing precision. A very long finish preserves the same poised, understated character, making the overall impression clear, refined and complete.
Jean Collet & Fils 2024 Chablis
Green apple and lemon zest lead, framed by the oyster-shell salinity and chalky mineral character associated with classic Chablis. The palate is taut and precise, with fresh acidity, restrained fruit and a clean, dry line through the finish. A polished match for oysters, grilled white fish, prawns or simply chilled as an aperitif.
