InchDairnie Distillery

InchDairnie is a modern Fife distillery whose groundwork began in 2011, with construction following in 2014 and first distillation in December 2015. Founder Ian Palmer built the project around the idea that flavour should be designed from grain, yeast, process and season rather than left to cask choice alone. The distillery varies its grains, yeast and distillation conditions through the seasons.

RyeLaw, its first official release, combines 53 percent malted rye with 47 percent malted barley and was distilled through a Lomond Hill still.
